Each Bottle Reflects the Pride of Mexican Identity

Don Miguel Hidalgo y Costilla was born on May 8, 1754, in Corralejo de Hidalgo and became a central figure in the Mexican War of Independence. He is regarded as a national hero and the “Father of Modern Mexico.” Every bottle of Corralejo Tequila proudly showcases the Mexican identity. On the neck label of the bottle, you’ll find the depiction of the first flag raised for an independent Mexico. It features an eagle on a cactus holding a serpent in its beak, referencing an ancient Mexican legend. Miguel Hidalgo’s signature is also found on every bottle, further honoring his legacy.

The Production Process

The modern Corralejo distillery was established in 1996 and is located in the highlands of the Guanajuato region, near Pénjamo. Today, Corralejo is one of the most consumed tequilas in all of Mexico. The agave harvest for Corralejo is done manually on the fields, where 6- to 15-year-old agaves are carefully selected. These are then cooked in the traditional stone oven, the Horno, at 93°C under the influence of steam for 27 hours. After cooking, the agave rests for 12 hours.

In a process involving 8 mills, the agave juice is extracted and fermented. The first distillation takes place in columns (Destrozamiento) to remove any impurities. The second distillation, in copper pot stills, brings out the tequila’s full flavor.
