Lind and Lime is an exceptional, sustainably produced gin from Edinburgh, offering much more than just a balanced taste of juniper, lime, and pink peppercorns. In each bottle, there’s a wealth of history. It actually begins in 1716 with the birth of a Scottish hero few people know: Dr. James Lind. Lind was a surgeon and ship’s doctor in the Royal Navy, responsible for significantly increasing the life expectancy of British sailors. He discovered a treatment for scurvy, in which citrus fruits played a crucial role. This is the inspiration behind the name of the product: Lind and Lime.
Since 2017, a group of young people has been paying tribute to this important figure in British maritime history with a gin – but not just any gin. Rather, they’ve created a classic London Dry Gin that follows a simple recipe, crafted to perfection. At the forefront of this endeavor is Master Distiller Andy, who refines an organic wheat distillate with seven botanicals, all of which are 100% organic, in a 500-liter still powered by 100% renewable energy. The dry botanicals are first macerated in grain alcohol overnight, after which the lime peels are added and distilled. The gin is then diluted to a drinking strength of 44% ABV with water and allowed to rest for a few days. Once the aging process is complete, the juniper spirit is bottled in beautifully crafted, specially designed bottles. In keeping with their commitment to sustainability, they avoid plastic packaging, using only glass, cork, and paper.
