San Cosme

Still Traditionally Produced to This Day

San Cosme Mezcal is a spirit made from the Espadin agave, produced in the state of Oaxaca, Mexico. The production process is akin to an art: during harvest, the leaves of the agave are cut away from the core of the plant. The agave hearts are then cooked in the traditional way, underground, in pits that serve as ovens. Here, the flavors of the earth and smoke are absorbed, giving the mezcal its distinctive taste.

Afterward, the cooked agave is crushed using the Piedra Tahona, a stone mill typically powered by a horse or ox. The agave juice is fermented spontaneously in open wooden barrels. Distillation takes place in an alambique de cobre, a copper still, over an open flame.

The brand name is derived from Saint Cosmas, the patron saint of doctors. San Cosme Mezcal is distilled at the Comercializadora y Envasadora de Mezcales distillery in Oaxaca, Mexico.

Sierra Madre is the exclusive importer of San Cosme in Germany.
