Without special soils, Sherry would be unthinkable. White, reflective limestone soils cover the slopes of the vineyards. The Albariza soils are the most popular in Jerez. They have the ability to retain large amounts of water and release it to the vines during the hot season, allowing the grapes (Palomino, Moscatel, and Pedro Ximénez) to thrive. Over many years, the Sherries of the “Don Zoilo” collection mature in the unique Solera system in the church-like high vaults of the house, where a light breeze always flows, allowing the Sherry to age perfectly in its oak barrels.
